Oven Fried Chicken

                   Albers Corn Meal
2 T butter or margarine
2 large eggs, beaten (or 3-5 small)
2 T milk or water

1 C Alber’s Yellow Corn Meal
1 C all-purpose flour

3 tsp. salt                                                             
2-1/2 tsp. paprika                                              
1-1/2 tsp. garlic powder
1-1/2 tsp. black pepper
OR     4 tsp. Cajun OR Creole seasoning

2-1/2 to 3 lbs. chicken, cut up and skinned         
OR  6 chicken breasts, cut in strips (boneless/skinless)

Preheat oven to 400°F.  Spread melted butter in 13 x 9-inch baking pan or on lipped baking sheet.

Combine Eggs and milk in medium bowl.  Dip chicken pieces into egg mixture.

Combine dry ingredients in medium bowl (or shaker bag or container).  Dip egg-coated chicken pieces in dry mixture; covering all sides.   Place in baking dish or sheet.

Bake for 25 minutes, turning once, in oven, uncovered.
